Pizza nights are really special in our house. It’s the first meal Luke and I made together and it brings back memories of my weekend visits to Philadelphia when he lived in a tiny studio apartment in Rittenhouse Square.
I decided on this for tonight because Luke had a long day at work and it makes him so happy!
The secret is in the sauce…and I will share it with you, my supportive ‘first day’ readers.
Don Pepino Pizza Sauce is $.99 at your local supermarket and totally makes the pizza.
Now, I know if I was truly a domestic goddess I would make the pizza sauce…yeah well that is not happening on a Thursday night, folks! So Don Pepino to the rescue!
1 bag whole-wheat dough from the bakery
1 can DP Sauce (you do not need the whole thing-freeze the rest)
~6 oz. shredded mozzarella (more if you’re feelin’ cheesy)
Topping (tonight I used sun-dried tomatoes from Trader Joes)
S&P to taste
Preheat the oven to 400F.
Flour a workspace (I have been informed that doing this on the new granite is a no-no)
Roll, pull, push the dough until you get something that resembles a rustic pizza shape (if you want, you can make 2 individual pizzas instead….same procedure).
Put a little cornmeal on the pan; put the stretched dough on the pan; put a little bit of olive oil on the dough; take a spoon and add the pizza sauce; spread mozzarella over the sauce; add toppings and S&P. Finito!
Pop that baby in the oven for about 15-20 or until the cheese is bubbling on top.
Let cool… or eat immediately and breathe quickly out of the corners of your mouth to cool your burning mouth off. J
Serves 6 (if you’re being good ;) 2 if you’re us
I just made a quick chop salad of cucumbers, avocado and strawberries to have on the side (just ran out of salad).
