Grilled Eggplant, Roasted Red Pepper, and Goat Cheese on Sourdough Rolls.
1/2 Grilled Eggplant (sliced in circles)
1 roasted red pepper (jarred)
2 oz. herbed goat cheese
2 sourdough (or other) rolls ( I found mine at Trader Joe’s)
Slice the rolls and coat with a light brush of olive oil. Place rolls on grill to brown.
drizzle olive oil
2 eggplant slices
1 piece red pepper
1 oz goat cheese on top of roll
2 basil leaves
This sandwich was delightful. And I think Kristin liked it too! (most important thing! Always make sure your guest leaves satisfied!)
On the side, I served grilled sweet potato and a tossed salad with tomato and shaved Parmesan cheese.
I have been introduced to Philadelphia’s “Rouge” by my boss. We’ve met a couple professional contacts there so far and let me tell you, I really really like this place.
