Typically, I’m a typical lunch-is-an-afterthought kinda gal. Salad with a little protein for me…nothing too time consuming or original. This morning, I went to the market bright and early to get food for the week as well as some dinner items for Luke since I’ll be out at a fundraiser tonight. I was perusing the produce section when I stumbled upon these beauties:
Believe it or not, not too long ago the only “Fig” I knew, was of the Newton variety. But in the past couple of years I’ve become quite the aspiring gourmet. I decided to make a perfectly balanced lunch for myself this afternoon.
Short on time, but not on inspiration, I compiled this lovely pairing. 1/4-1/3 c. whole milk ricotta, 1 fresh fig (halved) 2 T walnuts, and a drizzle of maple syrup.
I figured it’s time to pick up my game a little bit…considering in 2 months from now, I’ll be squeezing my things into one small carry-on and traveling to one of if not the culinary capital of the world…
