As I sit in bed lamenting about the fact that I am about to embark upon my last full day, I realize that it is quite necessary to return to reality and be an active participant in the holiday preparations. You see, I kind of avoided all the chaos by coming here. Sneaky, I know. But the holidays are fast approaching and that means a fabulous opportunity for entertaining.
My mom and I are hosting a charming open house on Christmas Eve day, simple yet beautiful. While here, we worked together via e-mail to plan a great menu. Better late than never, right? As always, its always subject to chance, but here it is:
Christmas Eve Open House:
We decided to go ‘heavy’ on the starters since most people will be popping in and out. And the main dish was chosen due to its resilience to being reheated.
Seafood Salad (Storebought)
Citrus Marinated Olives
Rosemary Roasted Nuts
Citrus Glazed Chicken with ‘Orange’ sauce (Le Cordon Bleu)
Sauteed Broccoli Rabe
Pistachio Cake (Mom)
Chocolate Tart OR Chocolate Cherry Trifle (What do you think??)
I picked dishes that wouldn’t require a whole lot of preparation and labor. Remember, jet lag is not a fun thing especially when cooking!
