I’ve really started to look forward to my little weekend baking routine. It’s calming and the product always makes me feel proud. It’s almost like setting small, achievable goals for yourself versus one huge one; the feeling of accomplishment is enough to make you set another goal, and another and another…
This morning’s goal was creating yet another Flour recipe: Pain aux Raisins. And you see they had to be as close to perfect as possible because today was my dear friend Lauren‘s birthday celebration/brunch!
I started rolling out the defrosted brioche (from last week) into a nice rectangle. I don’t know what it is but I am unable to roll a perfect rectangle!Next, I spread my pastry cream from last night into a nice thin layer over top.A sprinkle of raisins and I was ready to roll…literally. Into a nice little log and sliced into 12 pieces.
I lined a sheet pan with parchment, added the pain, wrapped in plastic wrap and set under our baseboard heaters for 2 hours(ish). 25 minutes in a 350 degree oven then topped with a simple icing of confectioner’s sugar, water and vanilla and voila and beautiful pastry fit for my beautiful friend’s birthday party.
We arrived and there were tons of vegan and non-vegan goodies to taste. I absolutely loved Lauren’s vegan cinnamon rolls. Mon dieu I could have died happy that very moment. I must get the recipe at once! After a lovely afternoon of conversation and laughs with friends old and new, we returned home and settled in for the ‘big game’.
