These days, when the sky is dark from the moment I leave the office to arriving home in a hurry to slip into my robe, turn on Gossip Girl and whip up something fast to warm me up and comfort my belly. Lately, my favorites have been fast, moderately healthy, and very, very delicious. The best part is, each came from the copious amounts of odds and ends in my fridge. I hate wasting and am doing my best to make sure everything is consumed.
I almost always have a bag of ready-made dough in the fridge. My favorite comes from Whole Foods and comes out perfectly every time. Stretch it really thin, bake in the oven at 450 after drizzled with some olive oil for 5 minutes or so, top with some toppings and there you go. This one has goat cheese, kalamata olives, mushrooms and red pepper spread on top.
I love big bowls of piping hot noodle soup. This one is a go-to almost every night of the week I’m alone. Into a pot goes chicken broth, frozen broccoli rabe, edamame, frozen (cooked) shrimp, and chicken dumplings. After the pot is simmering I add in mei fun noodles (tiny little rice noodles) and stir for only a few minutes. I pour it into a goal, top with sesame seeds and spicy red pepper sauce, and devour.
