Happy Easter and Spring! It’s getting warmer, I’m feeling happier, and as a result I’m in the mood to cook, entertain and do more. It’s a really beautiful feeling, if you ask me, after a winter of hibernation and tendency to stay at home by ourselves more often than we’d like.
Sometimes I forget I have really amazing friends in the city. I feel lonely, and like I need to make more of an effort to meet people (which is incredibly hard, I don’t care what anyone says). While both are very true, I’m also so lucky to know really intelligent, fun and generous people here. I say this because one of my goals for Spring/Summer is to take advantage of our rare outdoor space and celebrate these friendships and have more low key gatherings more often. Truth be told, I still have some nervousness surrounding entertaining. Will people come? Will they enjoy themselves? Will everyone get along? And so on… So I’m doing my best to conquer these “fears” with adequate planning, preparation, and having a good time myself!
I spent the weekend completing to-dos that have been on my list for years, dropping in at a lovely friend’s, and spending a lot of time cooking, singing and strolling solo.
This year we’ve been spending the holidays just the two of us for one reason or another and even still, I pulled out all the stops to make it beautiful. This year’s menu was simple, inexpensive, and very delicious. We ate, laughed and had such a ball.
Easter Menu for Two
Olives marinated in orange zest
Arugula salad with balsamic vinaigrette and shaved Locatelli
Lamb chops (using this marinade)
Roasted potatoes (CSA)
Sauteed dandelion greens (CSA)
Easy mango cobbler (using this recipe)
Chocolate (Bunny) of course!
