This week had a ridiculous start and boy do I have a story for you. After a pretty typical morning I arrived at work. After eating my breakfast and settling in, I see L calling and am surprised and a bit concerned since he never calls while I’m working. I pick up and hear him immediately say Do you have my keys? I am immediately flushed. A bit of background: In our little trinity, we have a gate that protects us and our neighbors from the street. This gate, once locked from the outside, cannot be opened from either side without a key…you see where I’m going with this. I reach my hand in my pocket and feel a set of keys. I grab my purse and at the bottom corner are another set. Yes, I locked him IN. I leap up to explain the situation to my boss and he can’t help but let out a laugh and tell me to go home and take care of it, along with permission to finish the work day from there. I drive as fast as I can and arrive home, tear open the gate and collapse into a chair in our kitchen and hand the keys over. What a morning.
After I calmed down a bit, I thoroughly enjoyed my day. Boy, do I love working from home. I made myself a quick but fresh lunch and took great, simple pleasure in being surrounded by the bright sunshine streaming in the window all day.
After work (and after getting another set of keys made!) I headed to the market to get supplies for Alexandra Cooks’ fabulous quinoa salad. I quickly grabbed the ingredients, a bouquet of flowers as a “happy spring to you” and was off.
The recipe is simple and such a fantastic use of fresh ingredients. I made it exactly as described and was really impressed.
Of particular note is how she prepares the quinoa. I had no idea! Up until now I was really underwhelmed by this supposed power grain. But this method of using much more water and draining it through a fine sieve (I used a colander lined with cheesecloth and it worked just fine) created an incredible base for a Spring side dish. In fact, you’ll see this on the menu for the BBQ we’re hosting this weekend.
